I put in a ticket with the developers of ElvUI and the following is what I was told:

I've logged in with all addons turned off, with only ElvUI enabled, etc. I use ElvUI (Version 10.53) and it had reset my interface to default, was running the configuration/installation utility in a loop, and none of my saved profiles (which were available and functioning perfectly yesterday) were available. So after installing the new patch 7.2.5 I logged into WoW and noticed that my interface was completely reset.
